Shellfish and Cuttlefish

Two molluscs that reward a hot pan and a short cooking time. Both arrive whole, in the shell or in the mantle, with the cleaning already done.

What Is Inside

  • Green lipped mussels, rope-grown and frozen in the shell
  • Whole wild cuttlefish, uncleaned and ready to break down

Steam the mussels until the shells gape and grill or braise the cuttlefish fast. Discard any mussel that stays shut, and pull the internal shell from the cuttlefish before cooking.
